INGREDIENTS:- Channa 300 gm Chopped onion 2 big size Ginger garlic paste 1.5 tlsp Chopped tomato 1 Green chillies Whole cumin  Bay leaves satto 1 tlsp Turmeric powder Red chilli powder Kashmiri red chilli powder Cumin powder Coriander powder Black paper powder Garam masala Roasted kasuri methi powder Ghee white oil Method:- At first make chenna . keep it aside . and store the chenna water .  Then fry the satto with ghee for 2 -3 mins on low to medium flame and keep it aside . Heat ghee and oil in a kadai then add the cumin and bay leaves. Then add the chopped onion and cook for few mins then add ginger and garlic paste cook for few mins on medium heat . Then add the fried satto and mixed well . Cook on low flame for 3  mins. Then add the chopped tomato and salt cook until oil separates.  After that add the chenna ,turmaric , chilli , black paper , cumin  and coriander powder mix them well . add some chena water . INGREDIENTS:- Loita mach ( bombay duck ) 750 gm Onion paste Chilli paste Garlic paste Ginger paste Red chilli powder Turmeric powder Salt Sugar Black paper powder Garam Masala Coriander leaves Bread ( only middle parts ) Bread crumbs Eggs Corn flour Refined oil METHOD:- At first wash the fish well then put it into the pan with salt and turmeric powder and cover it with lid . Keep the flame low to medium for 10 mins . After 10 minutes , strain and cool the boiled fish then debone it . Then heat refined oil into a kadai then fry onion , ginger , garlic and chilli paste . Then add the fish into it and cook it for few minutes. Then add the masalas and cook until oil separates. Finally  add the coriander leaves . Then cool down it and add the breads and mixed it well . Then give them cutlet's shapes . After that beat the eggs with cornflour , salt and black paper . And spread the bread crumbs on a large plate . INGREDIENTS:- Ganthi kochu ( arbi ) Chingri mach Finely chopped onion Ginger paste Chopped tomato Tamarind Green chilli paste  Grated coconut Whole garam masala ( bay leaves , cardamom , cinnamon stick , red chilli , cumin ) Mustard oil Salt Turmeric powder Red chilli powder Cumin powder Coriander powder Sugar Ghee Garam masala powder METHOD :- At first marinate the chingri with some salt , turmaric and red chilli powder. Then boil the arbi with some salt and black tamarind . Then strain them and let them cool . Then peel off the skin and cut them into halves . Next heat mustard oil and fry the chingri and arbi one by one. And keep them aside . Then heat mustard oil and ghee together and add the whole garam masalas .  Then add the chopped onion and fry untill golden brown on medium heat.  Then add the chilli and ginger paste and cook for few minutes .  Then add the chopped tomatoes and salt . Cook for few minutes.  When the oil separates from the gravy add grated coconut .

INGREDIENTS:- 1st Marination Chicken 1 kg Ginger 1 Tlsp Garlic 1Tlsp Salt Red chilli powder Kashmiri red chilli powder 1 lemon juice Red food colour 2nd Marination:- Hang curd 3/4 th cup Ginger paste 1Tlsp Garlic paste 1 Tlsp Cumin powder 1 Tlsp Coriander powder 1.5 Tlsp Garam masala powder 1/2 Tlsp Black paper 1/2 Tsp Nutmeg and mace powder 3/4 Tsp Roasted kasuri methi powder 2 Tlsp Sattu 2 Tlsp Melted butter 3 Tlsp Charcoal Butter Oil Ghee METHOD:- At first make some slits on the chicken to allow the spices into it . Then do the 1st marination with the above mentioned ingredients for 2 hours and put it into the refrigerator . After 2 hrs take out the marinated chicken and again marinate it with the 2nd marination ingredients which mentioned above for whole night or min 4 hrs while putting it into a refrigerator . After Marination:  Switch on the flame and heat 2 tlsp of butter and 1 tlsp of oil in a non stick frying pan and put the chicken into it and cook on medium flame

Restaurant Style Dry Chilli Chicken From Sneha's Kitchen

INGREDIENTS:- FOR CHICKEN MARINATION Boneless chicken cubes 300 gms Salt as per taste Paper 1Tsp Corn flour 2 Tlsp All purpose flour 2 Tlsp Ginger & garlic paste 1Tlsp Soya sauce 1Tlsp Egg 1 FOR GRAVY Onion patels 1 cup Sliced green chillies 4 - 5  Chopped garlic 1Tlsp Capsicum cubes  White part of spring onions 3 Tlsp Chopped green part of spring onions 1 Tlsp Red chilli sauce 2 Tlsp Tomato ketchup 2Tlsp Vinegar 1/2 Tsp Soya sauce 1Tlsp Corn flour 1Tlsp Oil  Salt METHOD :- At first marinate the chicken cubes and keep aside for 1 hr. Then , deep fry the chicken cubes in a wok untill golden brown and keep aside . Next , heat 3 Tlsp of oil in a wok . Then add chopped garlic and saute for few secs on flame . Then add white part of spring onions and green chillies . Mix every thing well and add the onion's patels and diced capsicums. Saute for 2 mins on high flame untill they turns crispy . KOLKATTAR ROSSOGOLLA From Sneha's Kitchen

INGREDIENTS:- Full fat milk 1 lt Vinegar  Water Cornflour 1 Tlsp Sugar 1.5 cup METHOD:- At first boil the milk in a heavy buttom pan.  Then switch off the flame and cool the milk for 2 - 4 mins. Then mix 1:1 vinegar and water in a cup. After that gradually add the vineger & water mixer, keep stirring slowly untill milk fat curdles and coagulates. After that take a seive and line with a clean cotton cloth and seive the curdles milk  and wash it with plain water for 2 - 3 times . Then Squeeze out the excess water and hang it for 30 mins . Then knead the cudles for 15 mins and make a soft dough .After that add 1 Tlsp of cornflour and again knead it . Then make small smooth balls from the dough . And keep them aside . Then boil the 4 cups of water and sugar together in a pan .  After that keep the flame medium and drop the balls slowly one by one into the pan and cover the pan with lid .  Finally Cook for 20 to 25 mins and open the lid and stir them every 4 to 5 mins then c

Homemade Condensed Milk from Sneha's Kitchen

INGREDIENTS:- Milk 500 ml Sugar 100 gms 1 pinch of baking soda METHOD :- First add milk and sugar into a heavy buttom pan . Then switch on the flame and  keep stirring continuously and reduce it to less then half .  As the sugar melt you will notice that the colour of the milk is changing. Keep scraping the sides and the buttom as you want to avoid lumps of milk in your condensed milk . When the milk become less than half then  add the baking soda into the milk . You will observe that the mixture has become frothy . Keep stirring continuously on the high flame untill the mixture become thick in consistency .  Do not reduce the mixture a lot as condensed milk tends to thicken while cooling as well . SERVE:- The homemade condensed milk is ready . Store it in a glass jar .
