Homemade Schezwan Sauce From Sneha's Kitchen
INGREDIENTS:-
Red chillies -100gms ( 50gms normal & 50gms Kashmiri red chilli )
White oil - 1 cup
Chopped Garlic - 1/2 cup
Chopped ginger - 4"
Tomato ketchup - 6 Tlsp
Dark soya sauce - 4 Tlsp
Crushed black paper - 1 Tsp
Vinegar 4 Tlsp
Salt
Sugar 1Tlsp
Water
METHOD:-
At first , soak the chillies into hot water for 1 hr .
Then paste the chillies without water and keep aside.
Then wash the leftover chilli paste from the blender jar and reserve the liquid for later use.
Next heat the oil in a kadai.
Then add the chopped garlic and fry untill it turns light golden brown.
Then add the chopped ginger and cook for 2 - 3 mins on low to medium flame .
Then add the chilli paste and mixed well .
Then add the reserved water and cook until the oil separates.
Then add salt , black paper , sugar , tomato ketchup , dark soya sauce one by one and mixed well . Cover and cook on low to medium flame for 10 mins .
After 10 mins add the white vinegar and cook for 5 mins with lid on low flame.
SERVE :-
The hot & spicy Schezwan sauce is ready to serve as a dip or gravy maker .
