Yellow Basanti Pulao from Sneha's Kitchen

INGREDIENTS:

* Gobindo bhog rice 600gm

* Ghee 

* Turmeric powder 1Tlsp

* Cashew nuts 3Tlbs

* Raisins 4Tlbs

* Whole garam masala ( 2" cinnamon stick, 7 cardamoms, 5 cloves , 3 bay leaves)

* Ginger grated 1.5"

* Garam masala powder 1Tlsp

* Salt

* Sugar 6Tlbs
METHOD:

At first wash the rice in running water . Do not rub it too much and strain it in a strainer. and keep it under a fan to let it dry.

After 30 mins add 3Tlbs ghee and turmeric powder to it and mixed well . Leave in for 30 mins again.

• After that heat a kadai and add 1 Tlsp ghee and fry the cashews and raisins. Keep them aside.

Again add  4Tlps  ghee and fry the yellow rice and grated ginger in low flame for 5 mins.

Then add boiled water.( if the rice is 4 cup then add 4 & extra 1/2 cup, total 4.5 cup) ,salt , garam masala powder , cashews and raisins.

put the lid and set the flame low for 7 mins.

After that add 6 Tlsp sugar and set the lid for 5 mins in low flame.

Finally switched off the flame .Open the lid and stir the rice slowly then left it for 5 mins .

Serve:

Your basati pulao is ready to serve with Mutton kasha.
