Basanti Pulao & Mutton Kosha SUNDAY SPECIAL COMBO From Sneha's Kitchen
BASANTI PULAO
INGREDIENTS:
* Gobindo bhog rice 600gm
* Ghee
* Turmeric powder 1Tlsp
* Cashew nuts 3Tlbs
* Raisins 4Tlbs
* Whole garam masala ( 2" cinnamon stick, 7 cardamoms , 5 cloves , 3 bay leaves)
* Ginger grated 1.5"
* Garam masala powder 1Tlsp
* Salt
* Sugar 6Tlbs
METHOD:
• At first wash the rice in running water . Do not rub it too much and strain it in a strainer. and keep it under a fan to let it dry.
• After 30 mins add 3Tlbs ghee and turmeric powder to it and mixed well . Leave in for 30 mins again.
• After that heat a kadai and add 1 Tlsp ghee and fry the cashews and raisins. Keep them aside.
• Again add 4Tlps ghee and fry the yellow rice and grated ginger in low flame for 5 mins.
• Then add boiled water.( if the rice is 4 cup then add 4 & extra 1/2 cup , total 4.5 cup) , salt , garam masala powder , cashews and raisins.
• put the lid and set the flame low for 7 mins.
• After that add 6 Tlsp sugar and set the lid for 5 mins in low flame.
• Finally switched off the flame .Open the lid and stir the rice slowly then left it for 5 mins .
Serve:
Your basati pulao is ready to serve with Mutton kasha
MUTTON KASHA
INGREDIENTS:
Mutton 500gm
Mustard oil
Whole garam masala ( bay leaves 2 , 2 red chillies , cimamom stick , cardamoms 6 , cloves 5 )
Hing 2 -3 pinch
Onion slice 3 large
Ginger 2 Tlsp
Garlic 1.5 Tlsp
Tomato chopped 1 small
Turmeric powder 1.5 tsp
Red chilli powder 2 Tsp or according to your taste
Salt
Black paper 1Tsp
Sugar
Garam masala powder 1 Tsp
Ghee 1Tlsp
METHOD:
At first , use a pressure cooker to cook the mutton with salt, turmeric powder, chilli powder. (Usually 4-5 whistle)
Then separately keep the mutton and mutton juice in different utensils.
Now , heat oil in a kadai and add 1Tsp sugar and caramelize it . This impact a nice colour to the dish . Keep stiring the sugar until it dissolves.
Then add hing , bay leaves , red chilli , cinnamon stick , cardamoms , cloves .
After that add the sliced onion and fry till it turns golden brown.
Then add ginger and garlic paste and fry till the raw smell goes away.
Next add chopped tomato , salt and cook till the oil separares.
After that add the mutton , mixed well and add turmeric powder, red chilli powder , black paper and cook for 5 mins in medium flame.
Then add the mutton boiling water , cover and cook for 7 - 8 mins on a low flame.
At final stage , cook uncovered for another 5 - 6 mins by adding 1 Tsp sugar , ghee and garam masala.
