Mutton Kosha from Sneha's Kitchen

INGREDIENTS:

Mutton 500gm
Mustard oil
Whole garam masala ( bay leaves 2 , 2 red chillies , cimamom stick , cardamoms 6 , cloves 5 )
Hing 2 -3 pinch
Onion slice 3 large
Ginger 2 Tlsp
Garlic 1.5 Tlsp
Tomato chopped 1 small
Turmeric powder 1.5 tsp
Red chilli powder 2 Tsp or according to your taste
Salt
Black paper 1Tsp
Sugar
Garam masala powder 1 Tsp
Ghee 1Tlsp



Method:

At first , use a pressure cooker to cook the mutton with salt, turmeric powder, chilli powder. (Usually 4-5 whistle)

Then separately keep the mutton and mutton juice in different utensils.

Now , heat oil in a kadai and add 1Tsp sugar and caramelize it . This impact a nice colour to the dish . Keep stiring the sugar until it dissolves.

Then add hing , bay leaves , red chilli , cinnamon stick , cardamoms , cloves .
After that add the sliced onion and fry till it turns golden brown.

Then add ginger and garlic paste and fry till the raw smell goes away.

Next add chopped tomato ,  salt and cook till the oil separares.

After that add the mutton , mixed well and add turmeric powder, red chilli powder , black paper and cook for 5 mins in medium flame.

Then add the mutton boiling water , cover and cook for 7 - 8 mins on a low flame.

At final stage , cook uncovered  for another 5 - 6 mins  by adding 1 Tsp sugar , ghee and garam masala.

Serve:

Now , the mutton kasha is ready to serve with pulao , paratha.
